Preheat the oven to 220°C (425°F). Cut the cauliflower into evenly sized florets — about 4 to 5 cm — so they roast at the same rate.

In a large bowl, toss the florets with olive oil, garlic powder, salt, and pepper until well coated. Spread in a single layer on a large baking sheet with space between pieces — crowding causes steaming instead of caramelizing.
