Steps

  1. 01

Remove the outer leaves from the cauliflower and slice it into thick "steaks" about 2-3 cm (1 inch) thick. You should get 2 to 4 steaks.

  2. 02

In a small bowl, combine the olive oil, cumin, paprika, salt, and garlic powder. Brush the mixture generously over each cauliflower steak.

  3. 03

Preheat your air fryer to 200°C (400°F), then place the steaks in a single layer in the basket without overlapping.

  4. 04

Cook for 10 minutes, flip the steaks, then cook for another 8 minutes until tender and golden brown.

Why it works

Why does salting vegetables before cooking make them taste better and change their texture?

Salting vegetables before cooking draws out moisture through osmosis, which concentrates their natural sugars and flavor compounds. With less internal water, the surface dehydrates faster in the oven or air fryer — and a drier surface browns better. For air frying, salt your vegetables 10–15 minutes before cooking and pat them dry to maximize crispiness.
