Stovetop Vegetable Stir-Fry
Broccoli, bell pepper, and carrots stir-fried over high heat with garlic, ginger, and soy sauce — tender-crisp and lightly charred in 20 minutes.

Cut the carrots into thin sticks, the broccoli into small florets, and the bell pepper into strips. Mince the garlic and finely grate the ginger. Prep everything before you start cooking — it moves fast.

Heat the vegetable oil in a wok or large pan over high heat until it just begins to smoke. Add the carrots and stir-fry for 2 minutes, stirring constantly — they need more cooking time than the other vegetables.

Add the broccoli, bell pepper, garlic, and ginger. Stir-fry over high heat for 3 to 4 minutes, stirring often, until the vegetables are tender-crisp and lightly charred in spots.

Pour in the soy sauce and sesame oil. Toss to coat all the vegetables evenly. Cook for another 30 seconds over high heat. Note: for gluten-free, swap soy sauce for tamari. Serve immediately over rice or noodles.
